Instant Pot Recipes

In April of 2017 Karen got a 6 qt. Instant Pot which is about two years before we hit the road. She loves it and is coming up with our favorite recipes which I’m parking here. You have to experiment to get good at using the pot. Our you can follow someone else’s recipe to the detail which will include the cooking times. Three people at work bought the thing and we are sharing experiences.

15 Bean Soup: She buys the dry beans with seasoning and adds meat. It’s wonderful especially the second day. The beans, even though they were first dry and hard, came out perfect. She says ” I used smoked sausage (all beef, one an one half pound) also the juice of one lemon and 2 tablespoons of chopped garlic and crushed tomatoes.” I bought her the glass lid that goes on the pot. It has a hole in it to release stem after the pressure cooker lid is removed. You leave the Instant Pot on warming and with the glass lid on it allows the bean liquid to thicken up.

Pulled Pork Shoulder: with Dr. Pepper and BBQ sauce. The first time she made it I asked her to put BBQ sauce on it after she removed it from the Instant Pot when the recipe has you putting it back in the with juice. It’s much better when you follow the recipe as written,

BBQ Chicken Wings: She does the same with chicken quarters. Use the large wings and it comes out as good as any restaurant. 1/2″ water 1/2″ BBQ in the Instant Pot basket so they don’t touch the bottom of the cooker. Pleasure cook on high for 15 minutes with the cooker sealed. She then pulls them out and placed them on parchment paper in the oven on broil to back more BBQ sauce on them.

Spaghetti: I’ll have to get her to give me the recipe she is using. She makes small changes. Everything, to include the meat, is cooked in the Instant Pot. You can brown the meat using the sautĂ© mode. At times, she might brown the meat in a separate pan. All I know so far is she browns hamburger meat and sausage, then adds tomato stuff and cooks it all in the instant pot. Then she puts in the spaghetti noodles and cooks that. Get the mild sausage because it cooks it’s flavor into everything. She makes a full pot of spaghetti and freezes some of it.
